Coratina is a traditional Italian olive cultivar prized primarily for producing high-quality, richly flavored olive oil. It is an attractive evergreen tree with narrow gray-green foliage and a classic Mediterranean appearance, making it useful both as a specialty fruit tree and an ornamental landscape tree.

Coratina produces medium-sized olives that ripen relatively late in the season. The fruit is known for its very high oil content and produces a robust oil with pronounced fruity, bitter, and peppery characteristics. The olives may also be harvested green for table use after proper curing.

Coratina performs best in full sun and exceptionally well-drained soil. Olive trees tolerate drought once established but do not tolerate standing water or consistently wet soil. In Florida's humid climate, excellent drainage and good air circulation are especially important.

North Florida Growing Note:
Coratina should be considered a specialty trial olive for North Florida rather than a guaranteed fruit-producing crop. Olive trees can grow successfully in many areas of Florida, but flowering, pollination, fruit set, and yield can vary considerably with winter temperatures, rainfall, humidity, and individual cultivar performance.

Coratina is also considered more cold-sensitive than some of the hardier olive cultivars. For the Florida Panhandle, choose a sunny, well-drained, protected location and avoid low areas where cold air or water collects.

Pollination Recommendation:
If fruit production is important, we recommend planting at least two different olive cultivars near one another. Olive pollination relationships can be complicated, and Florida-specific research on many cultivar combinations is limited. A second distinct cultivar increases the opportunity for wind-borne cross-pollination.

Fruit Use Note:
Olives should not be eaten directly from the tree. Fresh olives are naturally very bitter and must be properly cured or processed before eating.
